Here's what I've done in the three games
Dragon Age Origins
I completed two playthroughs, but started all default Origins
Rowan Cousland - female warrior (sword and shield) - romanced a hardened Alistair and became his Queen - Completed playthrough, and World State I'm using for Inquisition
Calliara Mahariel - female rogue (archer/dual swords) - in one playthrough she romanced Alistair and remained his mistress, in another playthrough she romanced Ser Gilmore (from an awesome mod), but my headcanon has always been Duncan (and Drake, duh) and later, in Awakening... SENESCHAL VAREL. THAT MAN IS HOT STUFF and with Robin Sachs voice, yum.
In one playthrough I even made her die killing the Archdemon. If there existed a mod that allowed to romance Sten I'd used it in a heartbeat and made it canon lol. I might use that playthrough for my next Inquisition one, the decissions were the same as with Rowan. In fact I played Rowan because I feel like female humans get the best ending of all of them (darn, you kill the baddies and marry the King).
My other Origins were:
Lucian Tabris - male rogue (assassin) - romanced Zevran. I had planned for him to be an utter bastard and do all the 'renegade' decissions. In the end he wasn't so bad.
Sereda Aeducan - female noble dwarf - romanced Gorim (of course) - never got too far with her, I actually made her to test a romance mod for Gorim which added kinky scenes to the Aeducan female origin scenes.
Coria Surana - female elf mage - young and naive, romanced Cullen. My headcanon was much happier, they got together in the end lol
Hellar Amell - male human mage - romanced Morrigan
Derrick Brosca - male casteless dwarf - romanced Leliana
Dragon Age II
Winter Hawke - female warrior (2H) - romanced Fenris. No discussion. Anders was up to no good shit, Merrill is just stupid (Calliara facepalmed so much during that playthrough) and Isabella... well, Isabella is... too many STDs. Sebastian was cute and all, but I played a paragon (diplomatic with some sarcastic part) and I got him somehow at 100 approval and... yeah, no. Fenris rivalmance is so much better. But if Varric had been an option, I'd gone full dwarf anytime.
I never played other playthrough.

Fione Lavellan - female rogue (archer/dual) - romanced Cullen. I was actually hesitating between Blackwall and Cullen (because Iron Bull is for my qunari mage when I make her) but I decided Cullen because he is so damn sweet when you get to Skyhold after Haven's destruction and he grabs your arm and says something like 'If you hadn't come back...' Omg. But in another playthrough (maybe elf again, but warrior this time), I'll go with Blackwall. I was planning to play a human but damn, it's so funny to tease the Chantry being an elf. Which reminds me that I absolutely despise Sera. She is offensive.
